RECIPE: Creamy Cantaloupe that's Gluten-free & (can be) Vegan


I'm sure you've heard that cantaloupe is good for you. 

It's a fruit, it's refreshing, and has a simple sweet taste. 

But do you know what's even better than "just" cantaloupe? Jazzing it up with some milk and a bit of sweetener.

Did you know about that? No? 

Well, I'll tell you then.

The milky goodness of this cantaloupe concoction is like cantaloupe ice cream without the work and time involved. 

Let me show you how.

Creamy Cantaloupe (serves 4)
Ingredients:

  • half of a cantaloupe
  • 2 c.  cold milk of your choice (I used rice milk in 1 bowl and cow's milk in another)
  • 1 - 2 tablespoon agave/maple/brown rice syrup (or 1/8 teaspoon liquid stevia)
1. In a bowl, use a measuring teaspoon to scoop out little ball-shaped cantaloupes. Let the juice drain onto the  bowl.
2. Add the milk and sweetener. Mix and taste for sweetness. Can add more sweetener if needed.
